The art of pizza at Molino

The story of Molino pizza begins with a special flour blend, which consists of wheat flour and durum wheat flour. This mixture is produced in Granges-prés-Marnand, a place with a long tradition of flour production. As early as the 1980s, Molino began developing a unique recipe in collaboration with Rhonemühle, which is still the basis for Molino pizzas today.

The magic of the resting time

An essential part of the Molino philosophy is the resting time of the pizza dough. The dough is stored for 48 hours in special, refrigerated dough safes, which are prominently placed in the pizzerias. This «siesta» makes the dough lighter, airier and particularly digestible, which is noticeable in every bite.

Quality from the region

Molino places particular emphasis on local ingredients. Most of the raw materials for the flour come from the area around Granges-prés-Marnand, which not only guarantees freshness but also supports local agriculture. This regional connection is reflected in every pizza served by Molino.
