We attach great importance to ensuring that our typical Italian products are authentic and come directly from their place of origin, such as Prosciutto di San Daniele DOP or Parmigiano Reggiano ‘Vecchio’ DOP. We attach particular importance to the quality and sustainability of our other products. For this reason, we source our meat and vegetables from Switzerland. Wine concept

In our wine list you will find a rich selection of Italian wines that reflect the diversity and richness of wine traditions from Italy. The majority of our wines come from the sun-drenched vineyards of Italy, complemented by individual regional Swiss wines that reflect the culinary diversity of our homeland.

Salt

Our salt comes from the famous Margherita di Savoia salt mine, the largest salt mine in Europe. The tradition of salt mining began here as early as the fourth century BC.
The salt is processed naturally, without any treatment or refining. This traditional method preserves the purity and natural flavour of the salt, which is revealed in every bite of our dishes.
With its aromatic and strong flavour, our salt adds an unmistakable note to every dish.

Pepper

The island of Madagascar off the coast of Mozambique has a tropical climate that favours the growth of a variety of fruits, vegetables and spices. These include pink peppercorns, the world-famous vanilla and wild Voatsiperiferi pepper. The flavours of the Voatsiperifery pepper are spicier and stronger and give off woody, floral notes and a hint of citrus fruit.

Flour

Our pizzas are made with 100% Swiss flour, specially produced for us by Group Minoteries SA at the Granges-près-Marnand mill. Thanks to our in-house secret composition of the flour, we can guarantee optimum fermentation and a perfect baking process.
We have experimented for a long time to find the ideal flour that can provide first-class flavour and the ‘leopard pattern’ on the bottom of our pizzas after baking. This characteristic pattern is a sign of quality and craftsmanship that makes our pizzas unmistakable.
