Our pizzas are made with 100% Swiss flour. Thanks to our secret in-house flour recipe, we can guarantee optimal fermentation and a perfect baking process. We experimented for a long time to find the ideal flour that could provide the first-class flavour and the «leopard pattern» on the underside of our pizzas after baking. This characteristic pattern is a sign of quality and craftsmanship that makes our pizzas unmistakable.
Enjoy our homemade pizzas made from the best Swiss flour and experience the incomparable taste and crispy texture. With a great deal of passion and our own Swiss flour blend, we prepare the heavenly pizza dough on the premises, which then rests for 48 hours in the refrigerated dough safes, some of which are prominently placed in the pizzerias. The siesta makes the dough lighter, airier and, above all, more digestible.
The «Pasta fatta in casa» – consisting of tortelloni, tagliolini and tagliatelle – is made on site daily with a lot of dedication and a pinch of amore, and stands for freshness and traditional craftsmanship. The daily fresh production also reduces food waste and underlines the credo of Pizzeria Ristorante Molino: Italian tradition, the highest quality and genuine craftsmanship combined with a seasonal taste experience.
