Acetaia Malpighi uses only selected, high-quality ingredients for its vinegar. Before the must is blended with the wine vinegar, this grape must is matured in wooden barrels for 15 years. The final blend of grape must and wine vinegar is then left to rest and mature for another 60 days in the company’s own wooden barrels before the IGP Balsamico is bottled.

Acetaia Malpighi The Acetaia Malpighi from Modena is the oldest and also the most important Acetaia. As early as 1850, Pietro Malpighi began to selectively sell his family-guarded balsamic vinegar to third parties. In doing so, he laid the foundation for the distribution of what had been a family treasure until then, a product of the noble Modenese families. More than 3000 barrili, as the wooden barrels made of different types of wood are called, have been stored for decades under the roofs of Malpighi, in which the precious balsamico matures for at least 12 years, but usually for 25 years. Until it is bottled in small bottles by the consortium under the strictest controls.
